Chicken, Green Bean, Potato Throw All In

I saw this recipe on Pinterest and the directions weren't all that clear, but it looked super simple and on this night that is what I needed!
All you do is throw together chicken breast, potatoes, and green beans and toss it all together with some Italian dressing mix & butter and  in the oven and voila!
dinner is done shortly after!
It was really good, but the mistake that I made was that I bought small white potatoes and figured they would cook fine, but everything else was done, and they weren't.
So next time I will be sure to cut up the potatoes to ensure that they will cook as well.

Here is what you will need:
4-6 chicken breasts, I cut mine up into smaller sizes
Potatoes, cut up ( i used about 20-25 small ones)
Green beans, fresh (about 1/2 pound) or 1 can, drained
1 stick of butter
packet of Italian Dressing Mix
foil, to cover


To Make:
For the italian dressing mix I just used a packet of Hidden Valley, but there are many brands to choose from and they all work just fine.
Arrange all the cut up chicken in the center, then the potatoes on one side, and green beans on the other.
Sprinkle a packet of Italian Dressing Mix over the entire top and then pour over a melted stick of butter.
Cover with foil and bake at 350 F for 1 hour.

  1. You didn't specify how many potatoes or how much green beans. You also did not include the Italian dressing mix or the stick of butter in your list of ingredients.
    Your directions aren't all that clear either. Either learn how to be exact in your recipes or stay off of Pinterest!

  5. Can you out the chicken breasts in the oven frozen or do they need to be thawed? On the post on pinterest it says frozen chicken but on the pic it looks like the chicken is thawed before it goes into the oven.

  6. Hollye, that is a great question. I've never tried it with frozen chicken so I'm not quite sure. I'm thinking it would just have to cook a bit longer, but I'm not sure I'd that would cause the pirates to burn or the veggies to get soggy.

    2. I use frozen chicken all the time. The family also likes Knorr's French Onion Recipe Mix instead of the Italian Dressing. So I just switch back and forth. Both make a delicious meal.

  9. So glad I found this! I do this all the time when I forget to take meat out to thaw for dinner. I used the picture (pretty self explanatory and the quantities don't have to be exact). I usually use frozen chicken and cook it for 90 minutes.

  11. I made this last week. Loved the beans and potatoes. Will use chicken thighs next time just because I prefer thighs over breasts. Nothing more than a personal preference. Delicious recipe.

  13. Crystal, I made this for my family tonight minus the potatoes and used frozen chicken breasts and frozen green beans that I had picked earlier this summer. I set the oven at 400 and let the chicken and beans cook for 30 minutes before I added the butter and seasoning. Turned out awesome and we didn't need to worry about thawing out meat! Thanks so much for a great meal idea that's both simple and fast!

  14. You did specify ingredient measurements, thank you. I was just wondering you said cut up potatoes but the picture shows whole potatoes, small ones but they don't look cut up?? Well anyway just wanting your thoughts, but it looks ggrrreat. I'll just follow your ingredient list but use whole pealed smaller russet potatoes. Thanks for sharing your recipe!!!
